Keto Snickerdoodles!

1/2 c melted butter
1/3 c sweetener (I use Pyure)
1 c Almond Flour
1tbl cinnamon

Flatten with roller between 2 pieces of parchment paper. Use cookie cutter or open end of a glass.

Bake on parchment paper at 350 degrees for 10 to 13 minutes

Lemon Coconut Cheesecake!



For the crust:

6 Tbsp butter, softened

½ cup granulated sugar substitute

½ cup desiccated unsweetened coconut

¼ cup coconut flour

½ tsp baking powder

For the filling:

8 oz cream cheese

1/3 cup granulated sugar substitute (I used Pyure)

1 Tbsp lemon extract

1 egg


To make the crust:

Cream together the butter and sugar substitute. Add the coconut, coconut flour and baking powder, mixing until thoroughly combined.

Press into a lightly greased nonstick springform pan (8 inches or several mini’s) and set aside.

To make the cheesecake filling:

Beat the cream cheese and sugar substitute together until smooth.

Add the egg and lemon juice and mix until thoroughly combined.

Pour the cheesecake filling over the crust.

Sprinkle handful of coconut flakes on top

Bake the cheesecake at 350 degrees: 30 minutes for a 9 inch springform pan, 22 minutes for 3 mini cheesecakes, 50 minutes if you double the filling recipe for a taller cheesecake.

After baking the cheesecake will have a slight wiggle in the center while warm.

Chill for several hours (longer for the bigger cake) until firm before serving chilled

Cauliflower Ranch Chips


1 cup grated Parmesan cheese
1 cup grated raw cauliflower
1/2 tsp parsley
1/2 tsp basil
1/2 tsp dill
1/2 tsp chives
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp pepper

Preheat oven to 450 degrees.
Add all ingredients to a bowl. Stir.
Line a baking sheet or stone with parchment paper.
Place about 1 TBSP of mixture on prepared baking sheets, about 1 inch apart.Bake at 450 degrees for 5- 7 minutes.
Remove and turn cauliflower chips over.
Bake for another 5 -7 minutes.

Note: I put the florets in the microwave for a few min and then I grate them in the food processor

2 Large Boneless Skinless Chicken Breast

32 oz. Organic Poultry Broth

2 c. Broccoli, Raw

2 c. Cauliflower, Raw

4 tbs Butter, Unsalted

4 oz. Heavy Whipping Cream

4 oz. Original Real Cream Cheese Regular by Philidelphia

4 oz. Natural Cheese Cheddar Mild by Kraft

1 tsp Xanthan Gum (optional)


Cook your chicken by preferred method. Set aside.
Steam broccoli/cauliflower until tender. Set aside.
Add chicken and broth to large stock pot, turn on keep warm or low.
In a small pot- add butter, HWC, and cream cheese. Turn on low.
Once the cream cheese starts to melt, add shredded cheddar and stir.
Once broth and chicken are warm/on simmer, add broc/cauliflower, stir.
After sauce is melted/blended, add seasoning to taste, let cook 2-3 minutes.
Then add sauce into large pot, stir, add Xanthan gum.
Let cook ~5 minutes. Serve!

Keto Lemon Cupcakes with Lemon Icing


This recipe took me months to perfect. It is delicious! Great texture, not eggy at all! Leave out the butter for a lighter cupcake texture.

Yield: 18 muffins


8oz cream cheese
½ c butter
8 eggs
8 Tbl (½ c sweetener, I used Pyure)
1Tbl baking powder
2 Tbl Lemon Extract
1 1/2c Almond Flour
1/2c Coconut Flour

Icing: Mix 8oz cream cheese, 4 tbl Sweetener (Pyure), 1 tsp Lemon Extract

INSTRUCTIONS (Preheat oven to 350F)

1. Mix all dry ingredients.
2. Put all wet ingredients in a blender or magic bullet. Blend until smooth.
3. Add dry ingredients and blend again until smooth. Let rest for 2 minutes so the bubbles can settle.
4. Fill cupcake liners in muffin tin (Don’t fill to top. Leave about ¼ in space)
5. Bake for 25 minutes, let cool and then ice the tops

Breakfast Keto Eats

OVERNIGHT Chia NoOats-Oatmeal!


1/2 cup chia seeds
1/4 cup unsweetened shredded coconut
1/4 teaspoon of vanilla
1/2 cup coconut milk
1 cup of almond milk
2 tablespoons stevia
1/8 teaspoon pumpkin spice seasoning
1/8 teaspoon of cinnamon
Optional: add dried berries and almond slivers on top!

1. Mix all ingredients in a large bowl, cover and refrigerate 6 hours or overnight.
2. In the morning, mix it again and add the toppings of your choice.

Use something like a large mason jar sealed with a lid in the refrigerator overnight.
It doesn’t get easier than that, does it?
